    Mini Hash brown Casseroles
  • Prep time: 10 minutes
  • Cook time: 30 minutes
  • Serves: 24 Muffins

Ingredients

  • 1 pound Bob Evans Original Recipe Sausage Roll – cooked and crumbled
  • 1 package Bob Evans Refrigerated Hash Brown Potatoes (20 oz)
  • 4 large eggs
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 1 cup ham, cubed
  • 1/2 teaspoon black pepper
  • 1/2 cup bell peppers, diced
  • 1 cup shredded cheddar cheese

Directions

Preheat oven to 350F. Lightly grease a twelve cup muffin tin. In a bowl whisk together eggs and milk. Add remaining ingredients and mix thoroughly. Fill muffin tins 2/3 full. Bake for 27-30 minutes or until a toothpick or knife inserted in the center comes out clean.
